How can people grow food in contaminated soil?

Just watched the movie, and can't understand what seems to me like a giant plot hole. So first the Fukai (the poisonous forest) is portrayed as evil and encroaching on human populations (like a paradise which is the Valley of the Wind) threatening to make the land inhospitable to humans. But the plot twist is that the poisonous forest is actually good and it's cleansing the soil and water from pollutants from the previous industrilised age.

But then how do people in the Valley of the Wind (and other nations) grow food in the contaminated soil in the first place? (Nausicaa confirmed the Valley's soil is contaminated when she explained that the Fukai species are not toxic when grown in the well soil in her hideout.) And if this contaminated soil can support crops and trees, then how is it contaminated and what's the point of the Fukai cleansing it?
