No. Saber does not have to get any focus in this route. As said before, she is JUST one of many servants. She is not the main character in this route. She is not the focus. And there's no reason she should be. Other characters are just as capable and it is nice that ufotable actually gives Shirou(albeit Shirou should get even more focus than he gets now) and Rin enough focus, as fitting for the actual lead characters of the entire visual novel.

So yeah, when people present "Saber eating too much" or "Saber not being at the spotlight" as freaking criticism for this show I want to flip a table - why should she? She is not even a protagonist. That's like complaining that there's not enough Sakura. Both of them have their routes where they are relevant. UBW is not that route. UBW servant focus is Archer.
