At least berserk got 10 or so chapters in 10 years. Nana is on hiatus since may 2009, no chapters, no nothing.

First of all, hilarious thread.

Second, I recently finished Golden Age and i've got to say it's one of the best stories I ever read, but I don't want to be stuck in hiatus hell with you guys so how much should I drag out the rest of the story so it's ended when i've caught up? Maybe one volume per month? One every two months?

Dude, berserk only releases 2-4 chapters a year. One year (2013 I think?) Kentaro miura released ZERO chapters.
Berserks art surpasses basically every other manga ever created. Theres no way such a work could be weekly. Sorry to disappoint.

I would suggest 2 volumes a year if you want to be safe. I could see berserk going on for up to another decade at most.

I heard that, due to coronavirus, George R. R. Martin is now writing every day. So maybe there's hope for an ending or at least a new chapter, if Miura is self-isolating as well?

damn, you've gotta check out the '97 anime. Adapts the golden age arc, which is considered to be one of the greatest arcs ever written, including myself.
