Such as Tengen Toppa Gurren Lagann or even naruto... Preferably action type of anime. Possibly where the hero of the shows starts of as to learn whatever he fights with and then later masters.

Can't help but notice you haven't watched any of the dragonball series yet. Try starting with those, there's plenty of character development, even though episodes tend to drag on.

Seconding Dragonball. At least the manga shows Goku as he grows from a kid to adult, so I assume the series cover the same.

Also try Legend of the Galactic Heroes. The story is set over many years, so all characters grow older and gets a lot of character development, especially noticeably for Reinhard and Julian.

Oh, I've watched dragon ball.. just forgot to add it ;D Im working on Legend of the galactic Heroes... But I'd prefer the character to start out as a child, I haven't seen the start of lotgh yet so not really sure wether he does or not but from what I've seen it doesn't seem that way? :)

No physical battles, but Hikaru no Go DEFINITELY does this.

i see you have watched Claymore, but the manga is longer then the anime and there is when they grow older, it expands over even more years then naruto shippuden does, like 7 years or so :P

but in the anime wich covers the first 52 chapters of the manga they are somewhat the same age, but i realy realy recommend start reading the manga from chapter 52 wich is episode 19 of the anime. because the anime is good too but after episode 19 they start fading away from the original storyline, so in my opinion its more of an introduction to the manga series in my opinion. the manga wich is Great, very nice story, and gets deeper and deeper and there is a great plot twist too wich changes the whole content of the show, making it alot more interesting.

the manga story at this point makes the anime look like Nothing, its realy good, there are also some chapters wich cover parts of Clare's past and some extra background stories of more characters.

trust me its good

Reinhard doesn't (Unless you count the many flashbacks to his childhood or start from the not as splendid Golden Wings movie), but Julian pretty much does, I think he's twelve or thirteen when he's introduced.

Seconding Jyu Oh Sei. Unfortunately, though, I felt that the story took a dive when he got older. Not BECAUSE he got older, but because after that point the plot took a different direction that I didn't like.

Noein does this in a very strange way. May not be what you're looking for, but you do get to see both the main character and his adult self in action.

Also backing up Dragon Ball. That's basically the point of the series.

The Earth King has invited you to Lake Laogai. You will be honored to accept his invitation.

Didn't watched it yet, but from what I've read, Capeta fits your request. If you like sports anime, of course.

And seconding Terra e...

A little vauge, but:
Shakugan no Shana. Although it went downhill and fast (but 3rd season hasn't aired yet).

Rahxephon and Escaflowne, both characters "master" their mecha's (sort of)

Blood+ although

What I mean is that thier physical appearance change... as it often does when one grows older. (A)

Gonna check some suggestions out, thanks alot. :)

If you don't mind sports anime, I highly suggest watching Major S1 through Major S5. It tell the story of Honda Goro from when he was in kindergarten all the way to adulthood, and EVERYTHING in between. It's truly the epitome of a coming of age story about a child's journey through life. Highly recommended.

Hikaru no Go. It starts with him 12 years old and ends with him at like age 16 - it's truly amazing to see him grow because one moment he's a child and the next he's a teen. The development is amazing.

Afro Samurai maybe.
When it shows his history you see him grow up and learning to fight.
