Personally, for me, It has to be Koe no Katachi (A Silent Voice)

That's because the anime's central idea made me reevaluate how I conduct myself, treat others, and value my possessions and self.

That I remember:
Hunter x Hunter
Clannad AS
Gintama
Mob Psycho 100 (Season 2)
3-gatsu no Lion
Bungou Stray Dogs
Rurouni Kenshin OVAs

must be either a beast or a god: he is no part of a state."

Clannad and NHK ni Youkoso-- my top1&2 anime, respectively.

I guess Violet Evergarden ep.10 was also something
And Fumetsu no Anate e ep.1 blew my mind
Oh, and the disappearance of Haruhi Suzumiya was intense
Gosick had 10/10 moments as well
Koe no Katachi goes without saying
The Mushoku Tensei part2 openings were on a whole new level. I love Mushoku Tensei
ERASED kept me on the edge of my seat for half of the series and brought me out of my anime burnout
Kimi ni Todoke meant a lot to me and allowed me to gain new perspectives on love, but a lot of its highs were the resolution of misunderstandings, so I don't know if I can really include it here

Some of Re:Zero's episode endings shook me

-----Just reread op's post; Clannad is not only sad. It's so much more than that to me and to so many people.
That was really uncalled for, OP.

For me, it would be Steins;Gate. Pretty self-explanatory.

Though Ig I have to include Kuroko no Basuke too. It's pretty much the first shounen I've ever experienced completely in some sense.

Oh, ofc, No Game No Life. I loved how everything was so fun with the outsmarting, fun concepts, and things like that. XD.

Ah, then there's Shinryaku! Ika Musume. It may not be an emotional anime, but I pretty much watched it when I was depressed, so... yeah. It cheered me up a lot.

Sadly, not Clannad as I was stupidly doing the try-not-to-cry challenge while watching it back when I first watched anime, but I bet on the rewatch I will cry so much. XD.
Neat.
Also neat.
And another.
+ another one.
And another one.
Then have one more.
Actually, have two more.

1. Erased ( when that girl comes with her baby, I mean, WTF!) Anger, hate, confusion, shock
2. Violet evergarden (mother & daughter) sad, hearth touching
3. Vivy (almost every episode, especially last one) amazed, sad, surprised
4. I want to eat your pancreas (reading diary) pure sadness
5. Happy sugar life (what's wrong with this people?!) Confusion, shock, happy, anger
6. Made in abyss (I thought this is just some cute girl adventure) happy, shock
7. Attack on Titan (eren manipulate grisha) WTF!, surprised

Girls’ Last Tour, TTGL, and Banana Fish were the biggest emotional roller coasters imo
