Every "ambitious" anime title has some form of politics in it. And each anime i have on my favourites list arent extremly politcs heavy it just helps with understsnding the world, themes and the situation itself, whike focusing more in hie charwcters interwct and think. You misunderstand, the politics in those shows makes us understand the situations while highlighting the main themes around it, not to mention the characters in those shows are far better in every way. S3 part 1 just uses politcs as a plot device, it was the typical "race against time" to stop mad king from doing something while there are added plot twists here and there. I wasnt really invested with the story as well as the character, but s3 prt2 did do a pretty good comeback.

The last 2-3 episodes where they explain the edlian thing was just lore and wolrdbuilding. It wasnt an integral part of part 3 but it was there to answer some questions regarding the origins of the titans. It was the conflict between the characters and their development is what made part 3 significant. The eldian thing was just context
