Hi Reika! I see you too are a big fan of RahXephon. It was the first series have I seen and since then I really started to watch a lot of animes.
Your tastes seem to be close to mine, I might take inspiration from your list. ;)

I said this about Bartender elsewhere: It’s an episodic, slice of life drama that examines the lives of the adults who regularly visit the ‘Eden Hall’ bar. Sometimes it’s romantic, other times it’s tragic, but most of all, it just makes me want to drink alcohol! [...] That kind of sums it up, but basically, I'm really enjoying it. For once, it's anime for adults that actually talks about modern adult life. The emphasis on cocktails is unique and exotic, too.
Basically, it's much better than I dared expect! I couldn't watch it in marathon mode or anything like that, but it's perfect as late night viewing. The whole idea of 'bar drinking' seems so... introspective. I rarely drink, but I like the idea of drinking something that tastes so perfect and savouring it, rather than the 'party culture' way of drink-until-you're-sick!
