well, It's been a while since I watch some of the animes on my list ._. Dennou Coil (which is "On hold", bu the way) is really nice, even if I don't like mistery (I really don't). I always learn a lot of words when I'm watching anime too~
Card Captor Sakura was my childhood! And I dropped Naruto Shippuuden in episode 49, I could not understand anymore D: But the most complicated series I ever watched was Kyoukai Senjou no Horizon.
Miyazaki and Satoshi Kon are heroes to me <3

An anime with not too much ecchi, fighting or fantasy... Maybe you should watch Ano Natsu de Matteru. I didn't liked it, but I can relate it's a very good anime with a nice storyline.
