Sorry it's taken me so long to reply. With the holidays and all I sort of wasn't paying attention to things.
Anyway I'd start with Macross Plus it's my absolute favorite. I know it's not in chronological order in the Macross Universe, but I didn't watch them all in order and you don't have to watch them all in order to enjoy them, they're each self contained series really.
I would skip Macross 7, I think it's just a average series.
Yes, but I find Gilgameshjust as interesting as the others. Probably because he likes Saber so well, but also because we don't get to meet him until the end, so to speak. And we don't get to really know him before he dies, and that's .. well, that's something. I don't like that they're like "we fight because it's fun", and not all of them are like that. As Emiya sees in Saber, she doesn't really like this fighting. I don't think (the first servant who dies whos name I cannot recall) likes it either. They're so different but also so much alike! It's a little exciting, I think.
My favorite Macross/Robotech series has to be Macross Plus. It's a OVA and takes place a decades after the events of the original Macross series. It's more of a stand alone series with almost no references to any of the other series. The story is amazing with great characters and gripping action. If you prefer dubbed, the English actors did a really great job and one of the better dubbed anime I've watched. The music is perhaps the best part of the anime, done by the great singer Yoko KANNO. She's done a lot from Wolf's Rain to Cowboy Bebop to Darker Than Black and many others. Macorss is my favorite Macross anime and one of my favorite anime series in general.
Other wise I'd go watch the original called The Super Dimension Fortress Macross and the movie made after it called The Super Dimension Fortress Macross: Do You Remember Love? Both are really good, sure the animation hasn't held up to the test of time, but it's still pretty good. Besides there's lots of action, music, fun characters and a pretty good story.
Do you have to watch from the very beginning, no. Each anime series has it's own set story and characters, but all the Macross/Robotech series make references to earlier ones as each series takes place in the same universe at different times. Sometimes a few years apart to a few decades.
So again it isn't necessary to start from the beginning, but if you want to get all the little references or the get the history the characters talk about I'd start from the beginning.
