Can't say I've watched many shows with that much fighting, but-
Seirei no Moribito - Probably the closest to what you're looking for. Fights only pop up every few episodes, but they're beautifully animated. Not anything like that video, mind you, much more down to earth fighting, quick and hard hitting. Fantastic spear-play, too.
Ghost in the Shell: SAC - You've already seen the first season, but the second has a few fights as well. The close-quarters fighting is much the same as the gun-play; nothing fantastical (despite being cyborgs, of course), brutal and to the point, no dancing around. Like Moribito, extremely detailed animation (same team behind both, so a given).
Kara no Kyoukai - Lots of dagger and magic fighting, and very well animated. The visuals are the main selling point of the series, so if you want to see good animation, this would be a good series.
Again, haven't seen many series where close-quarters fighting is the main focus.

I hope you noticed the date...Don't really remember what exactly I meant when I wrote the comment.
But I didn't find the story of the anime very meaningful or containing, so perhaps that's what I wanted to say...
The other thing that comes to mind is that it was pointless to watch it ;p
