Seriously?! I recommend Angel Sanctuary, it's very good.
Her stuff is ....well a lot of it is related to very twisted Alice in Wonderland type deals so some of her characters look the part.

Its impossible for me to pick just one. IMPOSSIBLE. I have a 4-way tie for the top spot of my favorite manga artist: Kentarou Miura (Berserk), Takehiko Inoue (Vagabond), Hiroaki Samura (Blade of the Immortal) and Tsutomu Nihei (BLAME!).

Nihei, the genius behind Blame, Abara, Digimortal and many others. His artwork is gritty and has crazy amounts of detail.

The stories end up needing few words because the artwork is so fantastic.
Anyone interested in helping me with a new signature >.<.... I really am useless with this sort of thing.

That chick doesn't get enough credit.
I like how she makes all the characters equally plain. They're all so simple, and they have flaws, just like real people.

Yeah, you pretty much nailed it!

There are many others I deeply respect (like Tsutomu Takahashi of Jiraishin fame, Hiroaki Samura, Miura Kentarou, Yukito Kishiro (Gunnm), Asano Inio, Junji Ito, Hiromoto Sin-ichi, Shirow and so on) but truly, when it comes to artwork nothing even begins to compare with Nihei's awesomeness!!

His art is wonderful (especially later in the series). Sometimes the characters just look so real and I can feel the energy from each game as if I was watching it myself. This is one reason why I like Eyeshield 21 so much.

I have a weakness for the kind of hair Morimoto Shuu draws (seriously that's my main reason for loving her endlessly), but lately with Asterisk it's been a total pleasure to just sit and look, which is nice. Can I point out I do not mean earlier G-Defend-era MS - that was a total turn-off.

Mori Kaoru's a close contender: not only can she draw gorgeous (gorgeous!) women, but in Otoyomegatari she managed to draw a wooden pillar in the process of being carved so entrancingly that I set it as my desktop background.

I can definitely relate to this. All her characters are very pleasing to the eye.

Yes, precisely! It's like there's something almost savoury to her artwork, hugely pleasant.

Mohiro Kitoh. Close next are Naoki Yamamoto and Hiroaki Samura. All of them mostly for their stories, not for their art (though Kitoh and Samura are really great in terms of art as well).

Yes :D Those two and Miyuki Abe are my triforce of manga greatness XD They all give similar vibes and have developed their style from humble/homely beginnings.

Amazing artist you mentioned there.

I especially adore Takahashi Tsutomu. I am particularly impressed with his stupendous artwork especially in Jiraishin. Ito, Miura, Samura, and Nihei are great choices too.

it's really difficult to pick up just few names.
so, here we go without any special order.

Nihei Tsutomu is absolutely amazing in drawing buildings and whole environment in his works. he makes all those constructions look weird yet realistic. hard to expect something else from former architect.
but his character design is not a design, you know... I could hardly determine all characters, because almost all of them look like siblings or even clones.
Oda Eiichiro,for his unique style.
haven't read any Inoue Takehiko's manga, but saw lot's of pages from them, as far as covers, and they definitely rock!
as for Urasawa Naoki's art, the best thing and the most amazing, that he actually manages to draw people from different races really different.
Asano Inio's works is a total win, but his art sometimes is too resembling when it comes to character design, almost all his characters in all series look really similar to each other.
Takahashi Tsutomu is the best at my point. he's art on double pages looks like a holy shit painting.
and Kyu Hayashida gets my respect for extremely detailed art.
