As a veteran "anime-watcher", I think some anime are just the kind that everyone should have seen, like Love Hina, Full Metal Panic!, Death note, GTO etc...
Popular, easy to swallow, anime.

But I have only read 2 complete mangas so far, so I have no idea which ones I should go for and read next.

So... I want recommendations for the kind of anime I just described, but manga instead.

I would appreciate if the manga didn't continue forever, and that I haven't seen the anime version of it (if there is one).

Thanks!

Most definitely Yokohama Kaidashi Kikou. Berserk is one that's been recommended to me as well, so I'll second that.

Also:

Claymore
Chrno Crusade
Akira
Genshiken
Battle Angel Alita
Bitter Virgin
Fruits Basket
Barefoot Gen
White Clouds (one shot)
Kare Kano

Battle Angel Alita - personally my favourite manga and only 9 volumes.
Paradise Kiss - it's shorter than Nana and pretty cool in the romance (shoujo) category. You could go for Love Hina as well if you don't mind, the manga was nice too.
Rurouni Kenshin - might be a bit long but it was really fun, the first half (maybe more) with Makoto Shishio was awesome.

These titles may be a bit serious, but hey, they're really really good:

Monster
20th Century Boys
Pluto
(all three are by Urasawa Naoto)

Vagabond
Slam Dunk
(both by Inoue Takahiko)

This man knows what's up. 20th Century Boys and Slam Dunk are my favorite manga. Vagabond and Pluto are good too. I haven't read Monster yet though, sadly.

I second third or whatever:
Yokohama Kaidashi Kikou
Berserk
Vinland saga
20th Century Boys
Battle Angel Alita
Bitter Virgin
Blade of the Immortal

I'd also add Eden: It's an Endless World! and Hellsing.
Eden is especially brilliant IMO. Definitely worth checking out.

ANGEL SANCTUARY - You'll be completely blown off by the magnificent drawing and storyline. It's the only manga I do not feel bad knowing that they have stopped making it into an anime.

Love Hina

You mentioned it in your first post and the manga is infinitely better.
