From what i remember the servants remember nothing of the past wars. Unless they were involved with them when they were alive.

Since all the heros are already dead i assume they would not be able to retain memories even if Resurrected.

No problem, i think the only hero that remembers the war was Archer from Fate/Stay cause he was Shiro Emmiya in the past.

I can only assume whats already dead and magically summoned or not ceases to exist like a fresh pawn.

She remembers, but there's certain minute details that they changed in Zero. Either way, she remembers Emiya Kiritsugu was her Master, that Kiritsugu feared Kotomine Kirei and so on. She also remembers Kiritsugu ordered her to destroy the Grail but she dissapeared before the Fire so she didn't see the Grail was tainted.

The most controversial part is when it deals with Ilya since it's established that Ilya and Kiritsugu were related in Stay Night but she never showed a lot of the expected emotions toward her, except there IS one scene where you can see Saber and Ilya bond which implied more meaning. It's assumed that Saber treated Ilya as an enemy and kept her guard up because she's a Master and not out of ill will.

Just as a FYI, Saber can remember because there's special circumstances to her being a Heroic Spirit. Also, Archer can't remember the Fourth War, he remembers the Fifth War and only barely as his memory is fragmented by innumerable summonings as a Counter Guardian.

As for why "normal" Heroic Spirits won't remember any wars they were previously involved in, it's because Servants aren't actually summoned spirits, they are COPIES of Spirits. Basically, the magician summons an almost perfect copy of the Heroic Spirit with the aid of the Grail and it is placed in a "vessel" which is categorized in one of 7 classes (this being the Saber, Lancer, Berserker, etc). This Servant remembers everything of it's past life prior his/her original death and retains it's sense of self and ego. When the Servant dies or loses all it's mana it is then discarded and erased by the world. The actual Heroic SPirit never leaves the "Throne of Heroes" where it is kept as a form of "data" protected from corruption.

oh right cause sabers was made a servant before she died. Shes still alive at the end of fate in her timeline isn't she. I overlooked that since most servants have been dead.

it's been years since i watched stay, i really should think harder next time.

This may be huge spoilers to some people so I might add it in a tag:

Well yeah, the anime kinda skimps on the details. It did mention however that she was not a regular Heroic Spirit but it never went into detail of what that meant. For example, when she says she can't take a Spirit form (like the other Servants) Rin takes it as saying Shirou just sucks as a Master and Saber keeps quiet, but the truth was that Saber just can't enter Spiritual form. Kiritsugu was a full-fledged Mage in Fate/Zero and even there Saber was unable to enter Spiritual Form.

Just skip to 4 min and continue from there, you will get a detailed explanation of Sabers wish and her unique contract as a servant. You also get an explanation of how time in general, the hero-system and so on works as well.

Here's part 2

Here's part 3

I suggest watching them, it's quite fascinating

I suggest reading Fate/stay night, it's quite fascinating. That's about all I have to contribute, unfortunately.

Yeah reading the VN is of course the best. But to answer the question at bay, I think the videos will suffice.

She does remember because
As a child, I was told that society is a melting pot of talents; knowledge and experience combined to form important alloys that will contribute to mankind. When I got to highschool, however, I thought that it's more like a river in which the water represents our peers while we ourselves are the stones in the river. Constant erosion by mindless majority sheeping has made us lose our unique edge. After I hit the age of 18, I realized that I've been wrong all along. Society is no melting pot. Society is no river. Society is a person, a very skilled rapist, and he has fucked us all.

SPOILER ALERT!!!!!!!!!!!!!!!
Saber does have memories of past Grail Wars because Saber made a pact with the World as she was dying; she would be allowed to try and obtain the Holy Grail to grant her wish. In exchange, if she succeeds, she will finish her life and become a Counter Guardian after her death, a sub-category of a Heroic Spirit at the service of the World. Because of this pact, she is in fact still alive and “frozen” in her dying state when she travels through time to obtain the Grail, and is summoned as a Servant in the Grail War. After each Holy Grail War, she goes back into her dying body, unless she wins or gives up, ready for the next Holy Grail War. Since Saber is not dead, she cannot dematerialize herself. This is also the reason she is able to retain her memories of the events of Fate/Zero, something a Servant should not be able to do since they are already dead.
