I wish to become a more qualified fan! Take a look at my list and plkease recommend some great shows! Preferably one of a genre that isn't covered by any of the shows I have seen? I wish to broaden my horizons... by watching shows that all good fans should see!

Everything from #1 to 100 will probably do. You don't need to watch every title but at the very least know of them.

Seconding Madoka Magica, Baccano, Durarara, Steins;Gate and Minami-ke.

Also:
Toradora, romance-comedy with a depth in characters (including side characters)
Spice and Wolf, the two mains are simply charming
Michiko to Hatchin, episodic in a not boring way, it has a really great and realistic storyline, as well as animation
AnoHana, tearjerker
Bakemonogatari, a bit of a harem with a bunch of fanservice, but interesting dialogues and characters, beautiful SHAFT animation
Arakawa Under the Bridge, one of my favourite comedies
Ghibli movies (Spirited Away, Castle in the Sky, Princess Mononoke, etc)
5 Centimetres Per Second, amazing artwork, scenery porn
Fullmetal Alchemist, a shounen series that stays true to it's genre/demographic, but adds an huge amount of depth, and doesn't continue on forever (I consider it the best of its kind)

aand, super biased on this, but you should really watch Sakamichi no Apollon (currently airing). Has jazz in it, if that's one of the reasons you liked Cowboy Bebop. Josei shows are generally amazing, but underrated.

Ha, you want to broaden you horizons? How about sekaiichi hatsukoi. It's a genre people usually either dislike strongly or love. It's boy x boy love. Now I'm not sure about you, but when I first heard about it I didn't have much of an opinion and thought nothing of the genre. Then one day I was curious and instantly fell for it. I'm completely obssessed with it now.

The rest is in you hands my friend.

I will add Princess Tutu, as nobody has mentioned it yet (including the top 100 and that image Neane posted. I don't believe that La Maison en Perirs Cubes has been mentioned either as an example of a short story dome right.

I will also give Haibane Renmei a mention in text

And seconding Rose of Versailles, naturally.

Pretty much every movie created by Hayao Miyazaki, this should be a rule for when you start watching anime that you have to watch these.

Ghost in the Shell (Movie and Series)
Neon Genesis Evangelion (Series + End of Evangelion movie + the new "remake" movies)
Mobile Suit Gundam (Just from looking at your list you seem to enjoy the action series, so you'll probably likes this series)
Trigun (I wasn't a huge fan of this, but it's a decent series, the "new" movie they made of it was pretty good though)
Black Lagoon
Higurashi no Naku Koro ni (Deep psychological horror series, very good watch especially if you enjoy that type of series).
Natsume Yuujinchou (I had to recommend something more light-hearted after all that, this is a really cute and sweet series, so this will be like a huge breath of fresh air after the above series).

Lol no one on this site can tell you that.

You have to find your own things to watch and get into the culture.
Besides as you would notice with most of the posts they give mostly entry level crap anyway.

Well he's talking about "essential" anime so hopefully he's talking about classics regardless of whether they suit his taste or not.
