obvious choice for me to recommend you is angel beats! but besides that i also suggest code geass. add the first season to your list, because i don't see that you have completed the first season yet, enjoy!

Neon Genesis Evangelion - It's a classic.
Fullmetal Alchemist: Milos no Seinaru Hoshi - Was worth watching
Other then that you have some stuff I still need to watch in there

Ghost Hound - It's slow at the beginning but it's really interesting if you like psychological horror and such.
Giant Killing - I'm not one for sports anime but I loved this.
Serial Experiments Lain - More psychological horror, pretty deep, and you can see where it inspired Ghost Hound.

Code Geass: Hangyaku no Lelouch - Very entertaining mecha action, great cast of characters, great animation and soundtrack.

Tokyo Godfathers - Definitely an excellent movie. I was skeptical at first due to the older art style, but this movie is definitely worth watching. It's probably a lot more enjoyable if you watch this on either Christmas day or Eve.

Oh you have a pretty list!

Black Lagoon - High-octane action and suprisingly good development. Don't expect much realism out of this though.
Cowboy Bebop - Not old enough to be a classic, but damn good enough to be one in a couple years. Watch in sub or dub it doesn't matter. You'll enjoy this if you liked Champloo :D
Honey and Clover - I can't rec this enough. Best romance anime I've seen.
Sayonara Zetsubou Sensei - The art looks stylish and the humor is pretty good, albeit a little wacky

Can recommend only Kanon from what ive seen

but i heard Planetes and Summer wars were good as well
