There have been some action anime with great fight choreography. The best I've seen are Darker Than Black, Samurai Champloo and possibly Baccano! What are the best you've seen?

Some Shin-chan movies have crazy good fights. Movie 1 & 2 in particular.

Other than that, Sword of the Stranger, Afro Samurai, Samurai Champloo.

Agreed. That fight was also one of the few ever that incorporated a flashback without interrupting the flow.

Also, a few Cowboy Bebop fights were really sleek.
5 main aspects I base my ratings on:
1. Did DramaEnthusiast make a thread about it?
2. Is it better than Breaking Bad?
3. Did MellowJello recommend the shit out of it?
4. Has it caused a (very entertaining) shitstorm on MAL?
5. Is it actually good?

Scratch the fifth point, it's not very relevant...

Hajime no Ippo for me. The sound, animation, and art style really sells the motion and feeling of each shot, sidestep, and second wind.

Flashback was done well and it was a great fight, especially compared to the usual shit Naruto puts out.

+1 Cowboy Bebop, Samurai Champloo, and Sword of the Stranger.

FMA:B has excellent choreography as well. Especially the fights with Bradley.

I should also mention the final fight in Fate/Zero.

Sword of the stranger is pretty awesome I completely forgot about that and FMA(both series) isn't too bad either.

Fate/Zero & Fate/Night fights (DEM ANIMATIONS AS WELL (ʘ‿ʘ))

One Piece Rob Lucci vs Luffy was an amazing one and I usually don't like the fights in one piece that much

Like seriously, great use of frame speed. It knows exaclty when to use a lot of frames and when to hold back to make the animation not floaty and more clunky so that it really feels that there is weight behind every strike.

A fight scene that I also really enjoy is Hisoka vs Gon in the heavens arena arc from HxH 2011 version.

Probably the fight between Spike and Vincent in the Cowboy Bebop movie. That being said I also fucking loved the fight between Mugen and Sara in Samurai Champloo.

Team Kenya Vs. Team Japan in Medabots is my obvious choice.

It's something about the balance between still screens and fast movements. I don't want to call it 'tension and release' but it prevents it from becoming monotonous while at the same time, the action never actually stops.

Gintoki and Jirouchou vs Harusame it's one of my favourites fights in anime. Very well animated sword action right there. Gintama has a lot of other amazing fights as well.

Kara no Kyoukai fights were fucking glorious. Ufotable at its best.

Fate/Zero was pretty nice in terms of choreography but not in anything else
