I'm going to end up watching both the anime and the light novel.
Anime first?LN first? How much of the LN does the anime cover? Suggestions?

The light novel was received very well from the adaptation from what I hear as an anime-only watcher. I believe it might get another season.

Read the novel first then anime.

Anime first. Save the better for last. You can't stop once you start reading.

This. Overlord is one of the better adaptations of late, but some elements in the last couple of episodes are disappointing to light novel readers.

Overlord was not my cup of tea.
If you enjoy games like MMOPRG like WOW, it might be good for you.
Personally, I feel the anime has zero suspense.

People seem to like the manga, so you might consider skipping the anime altogether.

It was actually a good adaptation until they cram a lot of content in a single episode. At least they ended it right. Overall, it's pretty good. But like any other LN to Anime adaptation (only few exceptions), LN would win if you ask which is better.

Always read/watch/play the source material than watch the adaption.

Watch the anime first then when you read the LN, you'll see more details the anime left out.
