List them all up, I'm interested in what people's favorite Soundtracks are! ^^
I personally really like those from Rozen Maiden and Kanon (2006) which are my favorites. I also like some of The Melancholy of Haruhi Suzumiya, Gunslinger Girl, Air and Bleach.

My favorite tracks are:
Rozen Maiden - Bara no Jubai, Battle of Rose.
Bleach - Never Meant to Belong, Will of the Heart.
Kanon (2006) - Last Regrets, Ridge of Frozen Soil
Air - Tori no Uta.
Gunslinger Girl - Tristezza, Tema I
The Melancholy of Haruhi Suzumiya - God Knows, Hare hare Yukai

Mai-HiME - Mezame
Wolf's Rain - Heaven's Not Enough
Noir - Canta per Me. The japanese version makes me all teary-eyed.
Suzumiya Haruhi no Yuuutsu - the classics Hare Hare Yukai, Bouken Deshou? Deshou?, God Knows and definitely Symphony of a Thousand.

Anything arranged by Yoko Kanno is going to be good, that said FLCL, Samurai Champloo, and Ghost in the Shell (TV) probably have the best overall soundtracks I've listened to (Champloo gets points for volume; I didn't realize there would be anywhere near as much music despite watching the whole series more than once).

Cowboy Bebop and FMA have good scores as well.

Kinda...well...I still don't know about them all <3

I love the Bakumatsu Kikansetsu Irohanihoheto OSTs, they're beautiful *__* My favorite tracks would be "Jidai ~ Douran no Koku", "Eien no Shikaku", "Shinnen", and "Tsurugi no Sadame."

I also love Gundam SEED/Destiny and Gundam 00 music. And Noir music of course!

And I <333 "Sadame" from the anime X!!!

"Never Meant to Belong", "Here to Stay", and "Torn Apart" from Bleach are beautiful as well.

Others I like: "Orochimaru's Theme", "Sadness and Sorrow"(Naruto), "Rosencreutz Orden", "Trinity Blood"(Trinity Blood), "I Talk to the Rain", "The Song of Storm and Fire", "Hear Our Prayer", "Break the Sword of Justice"(Tsubasa Chronicle)... Well,I <333 many more XD

Beck - whole OST as well, one of the best soundtracks I've ever downloaded. and it was the music that made me to watch the anime!

Fate/Stay Night - great OST, Kenji Kawai really is awesome.
Macross Frontier - I didn't watch the anime yet but my friends told me to check this out and I totally love it!
Byousoku 5 Centimeter/Kumo no Mukou, Yakusoku no Bashou - Tenmon's music fits these movies perfectly.
