Why is Ein/Elen also known as "Jiang Ren". Is that supposed to be her family given name?

Whether it's is Ein or Elen, it doesn't matter since both names are for the same person. I like Ein as much as Elen.

I don't knwo about it, but if I had to guess I'd say it's her name in chinese or whatever

it could be, that it's her family name, but I suppose you ask someone who played the VN, if you haven't already or played it yourself

Well, if that's the case, I suggest you ask Airitoizzy. She seems to have thoroughly played the visual novel. I haven't played the VN. Best regards.:)

Jiang Ren probably is Mongol or Vietnã, maybe Saracen but the chances of Saracen are lows, All have names like Ren, Raon and things like this, but because her origin i think it's a Mongolian name ;D

I did a little more searching on the actually kanji used for Elen's name, and figured out that kanji used for "Elen" is this: 江漣, which literally translates into "Jiang Ren". So it's not really another name.
