Not too many shows leave me HAVING to watch the second episode. It's usually more that I'll like it, but can put off continuing it for a little while. But there are a few shows where the first episode was so amazing that I had to come back for #2:

Code Geass
Death Note
Bleach

Code Geass and Bleach yeah, but Death Note took til the second episode to grab me.

Hmm, that's a pretty good question. There aren't many that have done that to me, but there are some. Most that I do get hooked on take until episode four or later.

Sometimes the story takes a few shows though to make it hard to pause for the day.
While not technically anime, currently I am a big fan of Hatsune Miku.
At least I can go see her in concert.

Spice and Wolf, Fell is love with it instantly and only wanted more after it ended. but then good thing season 2 is out now, it's just hard waiting a week between episodes.
It doesn't think, it doesn't feel, it doesn't laugh or cry..... All it does from dusk till dawn is make the soldiers die.

Clannad, Kanon, Full Metal Panic! and Neon Genesis were probably the most successful at keeping me infront of the computer screen ready to click the next episode.

Or the TV, but that was only FMP! because it is close to impossible to get any of the other three on DVD here in the UK.
