Wanted to say your photos of sushi are beautiful. I really like them. Í am a personal chef but I prepare mostly French cuisine, yet the pleasing beauty of Japanese food is always amazing.

Is there a kind of 'checklist' of things to look for to make sure you're in a 'safe' sushi restaurant? We have two local places and one of them is okay as far as I can tell but the other I'm not too sure about.

I had some vietnamese pho yesterday and it made me feel a bit better, I still went to work feeling like crap. Left me paranoid since my sence of smell was gone and I had a hard time doing quality check >.<
